Η ιστορία δεν βρίσκεται μόνο σε βασιλικά διατάγματα, κρατικά αρχεία ή κιτρινισμένες εφημερίδες. Κάποιες φορές κρύβεται μέσα σε ένα παλιό βιβλίο μαγειρικής. Ένα τέτοιο βιβλίο βρίσκεται σήμερα στην προσωπική μου συλλογή. Πρόκειται για τη «Μεγάλη Οικογενειακή Μαγειρική και Ζαχαροπλαστική», έργο του Β. Αλεξιάδη, που εκδόθηκε στην Αθήνα το 1899 από το Ελληνικό Βιβλιοπωλείο του Αναστασίου Δ. Φέξη. Με περισσότερες από 900 συνταγές και πολυάριθμες πρακτικές οδηγίες, αποτέλεσε ένα από τα σημαντικότερα ελληνικά βιβλία μαγειρικής της εποχής του. Δεν ήταν απλώς ένας οδηγός για την κουζίνα, ήταν ένας καθρέφτης της καθημερινής ζωής, των γεύσεων και της διατροφικής κουλτούρας των Ελλήνων στα τέλη του 19ου αιώνα. Ξεφυλλίζοντας τις φθαρμένες σελίδες του, συνάντησα τη συνταγή με αριθμό 332. Ο τίτλος της είναι λιτός: «Γουρουνάκι γάλακτος εις την σούβλα». Δεν πρόκειται απλώς για μία ακόμη συνταγή. Πρόκειται για ένα αυθεντικό ιστορικό τεκμήριο. Η συνταγή περιγράφει με αξιοσημείωτη λεπτομέρεια την προετοιμασία του γουρουνιού γάλακτος: το καθάρισμα, τη γέμιση με πιπέρι, φέτες λεμονιού, βούτυρο, τριμμένο ψωμί και μυρωδικά, το προσεκτικό ράψιμο και, τέλος, το αργό ψήσιμο στη σούβλα, με συνεχές άλειμμα από βούτυρο ή ζωμό κρέατος ώστε να διατηρείται τρυφερό και ζουμερό. Όποιος διαβάσει τη συνταγή σήμερα θα διαπιστώσει ότι οι βασικές αρχές του σωστού ψησίματος παραμένουν σχεδόν αναλλοίωτες έπειτα από περισσότερο από έναν αιώνα. Η ιστορία της σούβλας είναι πολύ παλαιότερη Η σούβλα δεν αποτελεί νεότερη ελληνική επινόηση. Οι ρίζες της χάνονται στην αρχαιότητα. Οι αρχαίοι Έλληνες χρησιμοποιούσαν τους οβελούς, μεταλλικές σούβλες πάνω στις οποίες έψηναν το κρέας μετά τις θυσίες προς τους θεούς. Από τη λέξη οβελός προήλθε και ο οβολός, το αρχαιότερο μεταλλικό μέσο συναλλαγής, καθώς οι μεταλλικοί οβελοί χρησιμοποιούνταν ακόμη και ως μονάδα αξίας. Στα ομηρικά έπη οι πολεμιστές ψήνουν το κρέας πάνω σε οβελούς, ενώ κατά τους βυζαντινούς και μεταγενέστερους χρόνους η τεχνική εξελίχθηκε στο αργό ψήσιμο ολόκληρων ζώων πάνω από τα κάρβουνα. Η συνταγή του Β. Αλεξιάδη αποδεικνύει ότι αυτή η πανάρχαια τεχνική είχε πλέον καταγραφεί συστηματικά στη νεότερη ελληνική βιβλιογραφία ήδη από το τέλος του 19ου αιώνα. Ένα βιβλίο πιο γνωστό από τον δημιουργό του Παρά τη μεγάλη επιτυχία του έργου του, ο ίδιος ο Β. Αλεξιάδης παραμένει μέχρι σήμερα σχεδόν άγνωστος. Οι βιβλιογραφικές πηγές τον αναφέρουν απλώς ως «λόγιο», χωρίς να διασώζουν το πλήρες βιογραφικό του ή ακόμη και το μικρό του όνομα. Είναι μία από τις σπάνιες περιπτώσεις όπου το βιβλίο ξεπέρασε σε φήμη τον ίδιο τον συγγραφέα του. Η επιτυχία του έργου ήταν τόσο μεγάλη ώστε γνώρισε νέες εκδόσεις και καθιερώθηκε ως σημείο αναφοράς για τη νεότερη ελληνική μαγειρική βιβλιογραφία. Η εύλογη απορία για τη Βέφα Αλεξιάδου Το επώνυμο Αλεξιάδης οδηγεί σχεδόν αυτόματα τη σκέψη στη Βέφα Αλεξιάδου, τη γυναίκα που έναν αιώνα αργότερα συνέβαλε όσο λίγοι στη διάδοση της ελληνικής κουζίνας μέσα από τα βιβλία και την τηλεόραση. Η σύμπτωση προκαλεί εύλογα το ερώτημα αν υπάρχει συγγένεια. Μέχρι σήμερα, όμως, δεν έχει εντοπιστεί κανένα τεκμηριωμένο στοιχείο που να συνδέει τον Β. Αλεξιάδη του 1899 με τη γνωστή μαγείρισσα. Η Βέφα γεννήθηκε Γενοβέφα Βούλγαρη και απέκτησε το επώνυμο Αλεξιάδου μετά τον γάμο της με τον καθηγητή Χημείας Κωνσταντίνο Αλεξιάδη. Παραμένει, ωστόσο, μια όμορφη ιστορική σύμπτωση ότι δύο διαφορετικές προσωπικότητες, με το ίδιο επώνυμο, άφησαν τόσο έντονο αποτύπωμα στην ελληνική γαστρονομική ιστορία. Κάθε συνταγή είναι ένα ιστορικό ντοκουμέντο Ένα βιβλίο σαν αυτό δεν μας διδάσκει μόνο πώς μαγείρευαν οι πρόγονοί μας. Μας αποκαλύπτει ποια προϊόντα υπήρχαν στην αγορά, ποια μυρωδικά θεωρούνταν πολύτιμα, ποιες τεχνικές χρησιμοποιούνταν και πώς διαμορφωνόταν το οικογενειακό τραπέζι πριν από περισσότερο από έναν αιώνα. Οι κιτρινισμένες αυτές σελίδες δεν είναι απλώς συνταγές. Είναι τεκμήρια πολιτισμού. Είναι μικρά ιστορικά αρχεία που διασώζουν γεύσεις, συνήθειες και έναν τρόπο ζωής που διαφορετικά θα είχε χαθεί. Και ίσως τελικά αυτή να είναι η μεγαλύτερη αξία τους. Να μας υπενθυμίζουν ότι ακόμη και η ιστορία μπορεί να σερβιριστεί… πάνω σε μια σούβλα. Πηγές: Β. Το δημόσιο σχολείο πρέπει να είναι για όλα τα παιδιά, να προσαρμόζεται στις ανάγκες κάθε μαθητή και να δίνει μεγαλύτερη έμφαση στην κριτική σκέψη, τη δημιουργικότητα και την ολόπλευρη ανάπτυξη της προσωπικότητάς του, δήλωσε την Πέμπτη η Υπουργός Παιδείας, Αθλητισμού και Νεολαίας Αθηνά Μιχαηλίδου, κατά τη συνάντησή της με τους πρωτεύσαντες και τις πρωτεύσασες στις Παγκύπριες Εξετάσεις Πρόσβασης 2026. Η κ. Μιχαηλίδου συνεχάρη τους μαθητές για την επιτυχία τους και ανέφερε ότι οι εισηγήσεις τους μπορούν να συμβάλουν στη διαμόρφωση ενός καλύτερου και πιο ελκυστικού σχολείου. Όπως είπε, στόχος του Υπουργείου είναι «να μειώσουμε την ύλη και την ανάγκη για φροντιστήρια, να προσφέρουμε περισσότερες ευκαιρίες για ολοήμερο σχολείο και, κυρίως, να καταστήσουμε το σχολείο πιο ελκυστικό». Στη συνάντηση συμμετείχαν, επίσης, ο Αναπληρωτής Διευθυντής Μέσης Εκπαίδευσης, ο Διευθυντής Μέσης Τεχνικής και Επαγγελματικής Εκπαίδευσης και Κατάρτισης και ο Προϊστάμενος της Υπηρεσίας Εξετάσεων. Η Υπουργός σημείωσε ότι η επιτυχία των πρωτευσάντων αποτελεί την αρχή μιας νέας φάσης στη ζωή τους, στέλνοντας παράλληλα μήνυμα στα παιδιά που δεν εξασφάλισαν τη θέση που επιθυμούσαν. «Αυτό δεν είναι το τέλος. Αντιθέτως, ανοίγονται πολλοί δρόμοι μπροστά τους», είπε, προσθέτοντας ότι μπορούν να προσπαθήσουν ξανά ή να ακολουθήσουν διαφορετική ακαδημαϊκή ή επαγγελματική πορεία. Κάλεσε τους μαθητές να αναφέρουν τι τους βοήθησε να πετύχουν και να εισηγηθούν αλλαγές στο σχολείο. «Έχετε περάσει περίπου 13 χρόνια στο σχολείο, μαζί με την προσχολική εκπαίδευση. Νομίζω ότι είστε οι καταλληλότεροι σύμβουλοί μας», ανέφερε. Ο Χρίστος Καλυβίτης, ο οποίος εξασφάλισε θέση στο Τμήμα Μαθηματικών του Πανεπιστημίου Κύπρου, εισηγήθηκε τη μείωση των μη εξεταζόμενων μαθημάτων στη Γ΄ Λυκείου. Ως θετικό στοιχείο ανέφερε ότι η σχολική του πορεία τον ωρίμασε και του πρόσφερε, πέρα από γνώσεις, εφόδια για τη ζωή. Ο Νικόλας Χρίστου, ο οποίος εξασφάλισε θέση στο Τμήμα Γαλλικών και Ευρωπαϊκών Σπουδών του Πανεπιστημίου Κύπρου, πρότεινε μικρότερη βαρύτητα και διαφορετικούς τρόπους αξιολόγησης των μη εξεταζόμενων μαθημάτων. Από το σχολείο ξεχώρισε τις σφαιρικές γνώσεις και τις σχέσεις που ανέπτυξε με φίλους και εκπαιδευτικούς. Η Μαρίλια Κωνσταντίνου, η οποία εξασφάλισε θέση στο Τμήμα Λογιστικής, Χρηματοοικονομικής και Οικονομικών του Πανεπιστημίου Κύπρου, τάχθηκε επίσης υπέρ της μικρότερης βαρύτητας των μη εξεταζόμενων μαθημάτων. Θετικά αποτίμησε τις συζητήσεις στην τάξη, οι οποίες, όπως είπε, διεύρυναν τις γνώσεις της και συνέβαλαν στη διαμόρφωση του χαρακτήρα της. Η Χαρά Ορφανού, η οποία εξασφάλισε θέση στην Ιατρική Σχολή του Πανεπιστημίου Κύπρου, εισηγήθηκε να δίνεται μεγαλύτερη έμφαση στα εξεταζόμενα μαθήματα. Αναφέρθηκε θετικά στις ευρωπαϊκές δράσεις, μέσω των οποίων γνώρισε μαθητές από άλλες χώρες και ήρθε σε επαφή με διαφορετικούς τρόπους σκέψης. Η Μαρίνα Χατζημιχαήλ, η οποία εξασφάλισε θέση στη Νομική Σχολή του Πανεπιστημίου Κύπρου, έθεσε το ζήτημα του μεγάλου όγκου ύλης στην κλασική κατεύθυνση, κυρίως στην Ιστορία και στα Αρχαία Ελληνικά. Ως θετικό στοιχείο ανέδειξε τις ευκαιρίες και τις δράσεις που προσφέρθηκαν από το Υπουργείο και τους εκπαιδευτικούς. Ο Αχιλλέας Παπαδημητρίου, ο οποίος εξασφάλισε θέση στο Τμήμα Πληροφορικής του Πανεπιστημίου Κύπρου, είπε ότι το σχολείο πρέπει να είναι περισσότερο μαθητοκεντρικό και να μην περιορίζεται στην προετοιμασία για τις εξετάσεις, αλλά να καλλιεργεί δεξιότητες και να προετοιμάζει για την αγορά εργασίας. Ως θετικό στοιχείο ξεχώρισε τις ευκαιρίες που προσφέρουν ευρωπαϊκά προγράμματα, όπως το Erasmus+. Ο Γιώργος Λιπέρτης, ο οποίος εξασφάλισε θέση στην Ιατρική Σχολή του Πανεπιστημίου Κύπρου, ζήτησε να αναγνωρίζονται οι ιδιαίτερες κλίσεις κάθε μαθητή και εισηγήθηκε λιγότερο προβλέψιμα θέματα, κυρίως στην Έκθεση, ώστε να καλλιεργείται η κριτική σκέψη αντί της απομνημόνευσης. Αναφέρθηκε θετικά στην εξατομικευμένη στήριξη των εκπαιδευτικών και στη συμβολή των Νέων Ελληνικών στην πολύπλευρη εξέταση σύγχρονων θεμάτων. Ο Πέτρος Νικολάου, ο οποίος εξασφάλισε θέση στην Ιατρική Σχολή του Πανεπιστημίου Κύπρου, αναφέρθηκε στην ανάγκη καλλιέργειας του χαρακτήρα και των ηθικών αξιών, καθώς και αναβάθμισης των σχολικών υποδομών στην Πάφο. Είπε ότι το σχολείο τον βοήθησε να ωριμάσει, ενώ ξεχώρισε τη συμμετοχή του σε πρόγραμμα Erasmus+ στην Πολωνία. Κλείνοντας τη συνάντηση, η κ. Μιχαηλίδου είπε ότι οι μαθητές αποτύπωσαν μέσα από τις τοποθετήσεις τους τον ρόλο του δημόσιου σχολείου. «Το δημόσιο σχολείο είναι για όλα τα παιδιά», ανέφερε, προσθέτοντας ότι πρέπει να βοηθά τους μαθητές να κοινωνικοποιούνται, να δημιουργούν σχέσεις και φιλίες και να συνδέονται με τους εκπαιδευτικούς τους. «Πρέπει να προσφέρει χώρο για συζήτηση, να μην περιορίζεται μόνο στην ύλη και στα μαθήματα, αλλά να είναι και περισσότερο ανθρώπινο», είπε, σημειώνοντας ότι αυτό συνάδει με τον στόχο για ένα πιο μαθητοκεντρικό σχολείο. Αναφερόμενη στις εισηγήσεις των μαθητών, είπε ότι το Υπουργείο κρατεί την ανάγκη για λιγότερη ύλη και μεγαλύτερη έμφαση στην κριτική σκέψη και στη δημιουργικότητα, αντί της αποστήθισης, και ότι θα εξετάσει τη βαρύτητα των εξεταζόμενων και μη εξεταζόμενων μαθημάτων. «Ακούμε όσα μας λέτε και θα τα συζητήσουμε με τους συνεργάτες μας», ανέφερε. Υπογράμμισε, ακόμη, τη σημασία του Erasmus+ και άλλων ευρωπαϊκών προγραμμάτων, καλώντας τους μαθητές να αξιοποιήσουν αντίστοιχες ευκαιρίες κατά την πανεπιστημιακή τους πορεία. «Η μόνη δική μου συμβουλή είναι να μη σταματήσετε να ονειρεύεστε και να μη σταματήσετε να προσπαθείτε», είπε. «Τίποτα δεν είναι ακατόρθωτο.
